Upstate Minestrone
Ingredients
- Phase 1
- 1 lb sweet/mild Italian sausage
- 1 tbsp olive oil
- Phase 2
- 1 c diced onion
- 2-3 cloves garlic, sliced thin
- 1 c sliced carrots
- 1 tsp crumbled dried basil, or a few Tbsp julienned fresh basil
- Phase 3
- 2 small zucchini, sliced
- 1 c tomatoes, chopped
- 24 oz beef bouillon
- 2 c finely shredded cabbage
- 1 tsp salt (may be omitted if sausage or bouillon is sufficiently salty)
- 1/4 tsp black pepper
- Phase 4
- 2 c great Northern beans in their liquid
- Garnish
- chopped fresh parsley
Instructions
- Slice sausage crosswise, about 1/2 inch thick
- Brown in oil in deep stock pot
- Add onion, garlic, carrots, and basil; cook 5 minutes
- Add zucchini, tomatoes, bouillon, cabbage, salt, and pepper
- Bring to a boil, reduce heat, and simmer covered for 1 hour
- Add beans with liquid, cook 20 minutes
- Garnish with parsley
Soup is even better the second day! Makes about 8 servings.
