Upstate Minestrone

Ingredients
  • Phase 1
    • 1 lb sweet/mild Italian sausage
    • 1 tbsp olive oil
  • Phase 2
    • 1 c diced onion
    • 2-3 cloves garlic, sliced thin
    • 1 c sliced carrots
    • 1 tsp crumbled dried basil, or a few Tbsp julienned fresh basil
  • Phase 3
    • 2 small zucchini, sliced
    • 1 c tomatoes, chopped
    • 24 oz beef bouillon
    • 2 c finely shredded cabbage
    • 1 tsp salt (may be omitted if sausage or bouillon is sufficiently salty)
    • 1/4 tsp black pepper
  • Phase 4
    • 2 c great Northern beans in their liquid
  • Garnish
    • chopped fresh parsley

Instructions
  • Slice sausage crosswise, about 1/2 inch thick
  • Brown in oil in deep stock pot
  • Add onion, garlic, carrots, and basil; cook 5 minutes
  • Add zucchini, tomatoes, bouillon, cabbage, salt, and pepper
  • Bring to a boil, reduce heat, and simmer covered for 1 hour
  • Add beans with liquid, cook 20 minutes
  • Garnish with parsley

Soup is even better the second day! Makes about 8 servings.
